Our Story

Pizza Pilgrims was born in a pub in Shepherd’s Bush in summer 2011 and is the brain child of brothers Thom and James Elliot who planned Pizza Pilgrims in the pub one night and the next day gave up their day jobs. They acquired a little 3-wheeled Piaggio Apé van known as Concetta, collected her from the south of Italy and spent six weeks driving her home. Along the way they learnt everything there is to know about pizza, from some of the most famous pizzaoli in the world. They discovered dough in Naples, mozzarella in Caserta and basil in Genoa - and left no stone unturned on what turned out to be a six week “Pizza Pilgrimage” through Italy. When they made it back to London, Thom & James nabbed a pitch of Berwick St market…and as they say, the rest is history!

Our Culture

Our team is everything so we like to celebrate that and thank our gang for all the hard graft they do, from quarterly nights out for management to annual Christmas and Summer parties, we love a good knees up. Whilst parties are great we also believe that every day is a school day, so we invest in training for everyone, the skies the limit and we actively encourage you to aim big, from KP to Head Chef, it’s there for the taking. But it’s not just the standard H&S stuff we train in, we also run regular trips to Naples in Italy to tour the Caputo flour mill and sample the lemons that make up our Pococello, giving you a full education of what Pizza Pilgrims is all about.

Our Pizza Academy

In 2019 we are launching our brand new Pizza Academy, a hub for all our training. When you join the Pizza Pilgrims family you’ll spend some of your first weeks here, learning everything from our steps to ensure great service, to the history of how Thom & James started throwing dough. And of course, they’ll be plenty of pizza tasting. So whether you’re front of house, or back of house, we’ll all get stuck in learning together.
