Green Cow Kitchens has been operating for 6 years and has established itself as a leading player on the fine dining food and drink scene in Herefordshire. The core proposition is a set 7-course tasting menu served on Friday and Saturday evenings to only 30 covers. The owners are in the middle of constructing a significant new £3m development adjacent to Green Cow which will enable the business to host larger events whilst still maintaining a focus on the small volume tasting menu proposition.
During June 2019, a new state of the art commercial kitchen is being installed and the main development will be complete by October 2019. At this time, the scope of service will expand greatly to encompass breakfast and lunch service, as well as event catering.

Detailed Job Description

Green Cow are all about the food. And they grow the cows themselves. In winter, they feature estate pheasant, partridge and duck. Throughout the seasons, the chefs forage for wild garlic, hedgerow berries, damsons, plums, apples, pears, puff balls, elderflower and more.
Since 2012, Green Cow has been showcasing the very best that our farm can produce.
The apprenticeship advertised represents a fantastic opportunity to be part of the start of an exciting journey for the business and full training and support will be provided, including 1:1 mentoring from a Michelin starred consultant chef who works in the business for 1 day per week. Alongside this the successful applicant will work towards gaining a Level 2 Commis Chef Qualification.
This is such an amazing opportunity for someone at a strategically key time; GCK is reopening after the new kitchen installation in July. Crumplebury goes live in October as well as a Michelin starred chef consulting. As a young budding chef this is amazing!
The role will be varied and include butchery and knife skills and adding value to foods in innovative ways (for example with our in house smoke house).
Duties to include:
• Ingredient preparation
• Cooking meals through various different cooking methods
• Plating up and presentation of food
• Taking instruction from senior chefs
• Cleaning and clearing down work stations
• Working in a safe manner at all times
• Portion control

Qualifications Required

None required, however, Maths and English will be assessed as part of the interview process.

Future Prospects

You will be working towards a full-time role should one be available at the end of your apprenticeship.
