Detailed Job Description

The award-winning Hartnoll Hotel is nestled on the edge of Exmoor National Park in the delightful Exe Valley in Devon. With stunning decor, sumptuous fabrics, plenty of space to relax, eat and drink and exemplary customer service, it is the perfect place to relax with friends and family or meet with colleagues.
The ideal candidate must have a passion for food, be extremely hard-working and want to succeed. We are looking for a Sous Chef that can bring fresh ideas to the talented brigade and support the head chef in the day to day running of the kitchen. The successful candidate will also work towards gaining a Level 3 Senior Production chef Qualification.
Duties will include -
Leads kitchen team in chef's absence
Provides guidance to junior kitchen staff members, including, but not limited, to line cooking, food preparation, and dish plating
Oversees and organises kitchen stock and ingredients
Ensures a first-in, first-out food rotation system and verifies all food products are properly dated and organized for quality assurance
Keeps cooking stations stocked, especially before and during prime operation hours
Hires and trains new kitchen employees to restaurant and kitchen standards
Manages food and product ordering by keeping detailed records and minimises waste, plus works with existing systems to improve waste reduction and manage budgetary concerns
Supervises all food preparation and presentation to ensure quality and restaurant standards
Works with head chef to maintain kitchen organisation, staff ability, and training opportunities
Verifies that food storage units all meet standards and are consistently well-managed
Assists head chef with menu creation and planning
Coordinates with restaurant management team on supply ordering, budget, and kitchen efficiency and staffing

Skills Required

A proven background in a professional kitchen who is fully competent in producing a variety of high quality dishes using fresh local produce

Personal Qualities

Strong leadership skills, able to work as part of a team, reliable and keen to take the next step in your career

Qualifications Required

Professional Cookery Level 2 or the equivalent. As part of this role you will undertake a Senior Production Chefs Qualification which will develop your Kitchen Management Skills.
Maths and English will be assessed as part of the interview process.
