You will work directly alongside Sam on a one to one basis where you learn a wide range of skills using the finest local ingredients. Sam has a true talent and passion for creating outstanding desserts, chocolates / chocolate work, patisseries, macaroons, petit fours however you will also be involved in private dining events, weddings, exhibitions etc. where you will develop and learner a wider set of skills covering all of the food groups.Learn to prepare a wide variety of goods to include pastries, desserts, afternoon tea but also the menus for the outside catering events, fine dining and weddings.Work with Sam to develop, designs, or creates new ideas and items.Follow recipes and direct to ensure excellent quality and consistency.Follows proper handling and right temperature of all food products.Decorate pastries and desserts using different types of icings, toppings etc. and ensure the food presentation will be beautiful and exciting.Checks the quality of raw and cooked food products to ensure that standards are met.Learn to ensure that all dishes are presented to the required standard.Check quality of material and condition of equipment and devices used for cooking.Report all equipment problems and maintenance issues, known safety hazards, or unsafe practices and procedures to supervisor immediately.Must possess a positive attitude and have the ability to work with a variety of people and in cooperation with co-workers efficiently and effectivelyLearn to recognize superior quality products, presentations and flavours.Ensures compliance with all applicable laws and regulations.Operates and maintains all equipment and reports malfunctions.Maintains cleanliness and organisation in all work areas.Ensure compliance with food hygiene and Health and Safety standards.Maintain a lean and orderly cooking station and adhere to health and safety standards
