Main function of the role:

  • To work hands on for the operational productivity of the kitchen department and its operating standards
  • To work under the Sous Chef, Head Chef and Executive Chef to support the daily duties within the entire kitchen department
  • To guide all freelance and junior chefs in all menu production and business needs
  • To provide food quality and consistency by following signed off specification recipes
  • To help the daily section ordering and stock levels required to maintain the kitchen’s production in line with the business needs

Key Responsibilities:

  • To deputise for the Sous Chefs in their absence on their current working section
  • To support the kitchen department including as the supervisor of all elements from breakfast, canapés, finger food, bowl food and plated dishes
  • To provide guidance to the junior chefs, freelance chefs and porters, including, but not limited to, preparation, cooking and tastings of the core menu dishes
  • To oversee and organise each sections stock and ingredients in both preparation and stock holding, in collaboration with the Sous Chefs
  • To ensure a first in - first out rotation system and check all food is correctly dated, labelled and organised in line with both site specific and company standards
  • To mentor and train all junior chefs, freelance chefs and new chefs to the kitchen and menu standards
  • To help manage food and production levels with the Sous Chef by keeping record of waste, stock holding and raise any food cost concerns
  • To supervise all section food preparation and presentation to ensure quality and set standards are achieved
  • To work with the Sous Chef to maintain kitchen organisation, staff ability and training opportunities
  • To control each sections food storage area and maintain them to the required standard, ensuring they are consistently well managed and clean
  • To assist the Sous Chef, Head Chef and Executive Chef with future menu creations and menu evolution across the operation and the future business needs
  • To complete any reasonable task as required around the business needs

Experience/skills required:

  • Formal culinary training
  • At least 2 years’ kitchen experience, within a similar venue
  • Previous Production and Event work
  • Good foundation of Health and Safety as well as Food Safety
  • Level 2 Food Safety Management via NCASS or Equivalent
