Our Marylebone restaurant is only a short walk from the bustle of Oxford Street, and right in the centre of Marylebone High Street that has a great village feel in the centre of the capital. As well as a fantastic restaurant you’ll also find a traditional fish counter where you can buy fish to take home and cook yourself, or you can take your pick and have it cooked there and then to your liking.

You will find a wide variety of fresh fish, caught within the season, and delivered daily from our local fisheries and fishermen. We believe in supporting sustainable fishing and buy direct from locally sourced seafood such as rod and line caught Wild Sea Bass and Hand-Dived scallops from just off the coast of Dorset. Freshly caught for the freshest taste.

Overview

As an assistant manager you are expected to use your talent to take charge of the business and its employees.  It will be up to you to set the tone, create the energy and dynamism for your employees to perform to the highest level and drive the site to achieve its targets. To help you achieve these aims I have detailed your personal goals, site performance agreements and general key responsibilities.

Personal Goals (These are examples we will complete these collectively)  

Support the GM in achieving targets and budgets as set by the company

·        To report a weekly beverage gap to be less than 0.35%

·        To ensure all beverage ordering guidelines are met and administration of ordering is completed with integrity

·        To ensure food and Beverage variances are investigated fully and are reported to GM

·        Ensure that COSHH training is completed by all site staff – Arranged through Ecolab

·        Maintain a weekly average customer spend is more than £35

·        To ensure that all consumable / chemical ordering guidelines are met and maintained at less than a spend of £80 per week

·        To ensure all administration of consumable / chemical is completed with integrity including stock checks.

·        Assist with management, development and completion of other Managers Goals

Site Agreements

·        Labour control – Follow the forecasted rota – Deviation permissible with GM approval, without compromise to sales trends

·        Completion of daily rotas and sales

·        Daily Food Safety and Health and Safety checks complete and implimented

·        invoices by 6pm and Daily banking completed

·        Week Stocklink reconciled by 11:30 pm Monday & Weekly paper work completed and kept in the folder ready for inspection.

·        Cleaning tasks observed and completed and checked to the correct standard

·        Cash up completed am and pm – Including cash control documents scanned, banking slips scanned and emailed.

·        Site open / close tasks checked and completed correctly

·        Daily banking completed.

·        Achieve 80% or more on the mystery diner results

·        All Maintenance issues reported to GM or emergency logged on Pronett and acted on immediately – SGP needs to be chased

 

Key Responsibilities

·        Build a cohesive team front of house and back of house, fostering great professional staff relationships

·        Deliver excellent customer service at all times, projecting a professional, friendly and approachable manor which delivers the FishWorks experience to every customer, including exemplary staff appearance.

·        Ensure team members have received appropriate induction, on-ongoing training, personal development and appraisal as per policy

·        To follow and maintain company policies and instruction at all times

·        Pro-actively generate ideas to enhance site performance and work with site team to resolve challenges

·        Manage daily labour costs and react without compromise to sales trends

·        Create accurate account reporting in line with company policy based on the P&L

·        Ensure that all company marketing initiatives and promotions are executed by the site

·        Efficient stock control and management

·        Manage all cash and credit card transactions as per the financial Procedures / policy within the business, ensuring that banking is accurate and is banked in accordance with the policy

·        Ensure the security and safety of the building and those in it at all times

·        Comply with company H&S, Food Safety policies – understand the contents of the manual and ensure its implementation and ensure that all staff members have signed this documentation.

·        Quality checks conducted and FIFO & Use by dates adhered to and checked

·        To attend all manager’s meetings and training sessions when scheduled

·        Good staff retention – ensuring that accurate training is undertaken as per the policy

·        Contributes to sales by increasing covers and spends and achieving great customer feed back and no complaints

·        Outstanding communication levels maintained at site level and above

·        Support and assist other sites within the company in staffing needs
