An introduction to Marugame Udon
You will be joining us in the early stages of our exciting growth journey! We have just launched in the UK backed by Toridoll, one of the world’s biggest restaurant organisations with over 1700 restaurants globally. Our first London restaurant opened in July 2021 in Liverpool Street.
Marugame Udon is all about serving amazing quality Udon noodles in a lively, energetic and casual environment and at exceptional value. We want to become the everyday choice for our customers and show them the excitement of this wonderful cuisine and experience.

What is the role about?
You are energetic and hands on, and will take charge of all aspects on the business, bringing Marugame Udon to life here in the UK working in a high volume, fast paced environment which will be both exciting and challenging with great responsibility.
You will need to create a lively and welcoming atmosphere for your customer where they can be served at speed with the perfect fresh bowl of Udon noodles and crispy fired tempura every time. Our drive for quality, service, warm hospitality and cleanliness will be relentless.


You will learn and develop a huge passion for the authentic, handmade, tasty Udon you serve. Building and leading your team (chimu) to be high energy, friendly, multi-skilled and efficient. Learning every day and continuously improving, you will drive a win- ning mentality. We will progress you through a fast track 6 month training program to prepare you for your own Marugame Kitchen.

• Work well in a quick service environment with a focus on speed

• Have a passion for Pan Asian food
• Have a focus and great understanding of labour and food cost control, and be P&L familiar
• Be adaptable, able to work on all stations with speed and precision both in the kitchen and dining area
• Hire and retain a large energetic team of adaptable, multi skilled team members
• Motivate your chimu and keep the energy levels high, providing opportunities for development
• Maintain your training and own Marugame kitchen to a high standard. Keep the open kitchen and dining area looking spotless, compliant and hygienic

Essential Skills and qualities
• Bags of energy and can work in a fast environment
• An inspiring leader with the ability to work well in a team and with peers
• Commitment to the Marugame project of a significant UK roll out over the next 5 years. This may involve many openings, international travel, evenings, weekends, and all at a high pace in an evolving environment
• Ability to cope with the changing environment of a new business, being able to change focus and with a ‘can do’ attitude • Experience of a business that operates a significant delivery aspect

• Comfortable with and able to use the latest hospitality technology
